Foodymandy's Chewy Chocolate Chip Cookies

Both for non-vegans and vegans alike!

Ingredients
  

  • 2 eggs or 1 flax egg, for a vegan version
  • 1/2 cup butter or vegan butter or coconut oil, at room temperature for a vegan version
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 2 tablespoon cornstarch
  • A pinch of salt
  • 1/2 cup of chocolate chips or use vegan chocolate chips, for a vegan version

Instructions
 

  • If you're making the vegan version with a flax egg: place the flax meal into water and stir and let it set aside for 5 minutes.
  • In a large mixing bowl, blend the butter and sugars using a mixer. Then, add egg (or flax egg) and vanilla extract and beat for 1 - 2 mins.

  • In a separate bowl, whisk the flour, baking soda, cornstarch, and salt together.
  • Mix ingredients from step 2 and 3 together.
  • Mix in chocolate chips.

  • Use ice cream scooper to form the dough balls. Place the dough balls on a baking tray into a freezer for at least a few hours before baking.

  • When ready to cook the cookies, preheat the oven to 200ÂșC and bake for 10-12 minutes until golden brown.
