If you're making the vegan version with a flax egg: place the flax meal into water and stir and let it set aside for 5 minutes.
In a large mixing bowl, blend the butter and sugars using a mixer. Then, add egg (or flax egg) and vanilla extract and beat for 1 - 2 mins.
In a separate bowl, whisk the flour, baking soda, cornstarch, and salt together.
Mix ingredients from step 2 and 3 together.
Mix in chocolate chips.
Use ice cream scooper to form the dough balls. Place the dough balls on a baking tray into a freezer for at least a few hours before baking.
When ready to cook the cookies, preheat the oven to 200ÂșC and bake for 10-12 minutes until golden brown.
Let the cookies cool for about 5-10 minutes before serving.
