I am calling this carbonara “lazy” because it doesn’t use the traditional carbonara ingredients that are a bit harder to find. Rather, I used ingredients that you can find at any regular grocery store. Instead of using pancetta or guanciale, I used good ol’ bacon. And instead of using pecorino, I used parmesan. Also, I hope to not offend Italians with the choice of unauthentic ingredients.
I have always been so intimated to making carbonara. It requires a specific technique when you are cooking the pasta in the sauce so that does not overcook to become scrambled eggs with pasta. I gave it a shot – it is pretty easy and quick to do! So I guess you can call it lazy in the sense that it is simple to cook as well!
Lazy Spaghetti Carbonara
Materials
- 4 eggs
- 2 cups parmesan grated
- 2 teaspoons salt
- 2 teaspoons black pepper
- 8 strips bacon
- 1 cup spaghetti
Instructions
- Beat 3 eggs together and then whisk in the grated parmesan with salt and black pepper to make the carbonara sauce mixture.
- Slice the bacon into small cubes. Cook the bacon. On the side, cook the pasta according to the packaging’s instructions. Once pasta is cooked, strain the pasta but save some of the pasta water because you will need it for cooking the carbonara.
- Mix in the pasta with the cooked bacon. Then mix in the carbonara sauce mixture and 1/3 cup of pasta water on a low / medium heat and continuously toss the pasta in the mixture till it is a saucy consistency. You need work cautiously because you don’t want the eggs in the carbonara sauce mixture to cook into scrambled eggs!
- Serve with some pepper or parmesan on top.
