I am obsessed with my pasta machine! Maybe I should find some new hobbies instead, but I literally won’t stop talking about it. I can’t believe how simple and fun it is to make pasta from scratch! I don’t think I will buy pasta from the shops ever again. That’s what I said about hummus and pesto and my friends thought I would have folded on that statement. But I can confirm that I have held onto my words!
This is the pasta machine that I have. It comes with the fettuccine and tagliolini attachments. You can purchase additional attachments like one that automatically stuffs the ravioli for you! But I have not yet reached that depth into the pasta making rabbit hole yet (perhaps I will soon).
I had my freshly homemade fettuccine with my wild garlic and pistachio pesto!
Fresh Homemade Fettuccine
Materials
- 1 cup flour
- 2 eggs
Instructions
- Form a well with the flour. Crack the eggs in the well
- Mix the flour and eggs together and knead to form a ball. It gets super messy and sticky! If it is a bit on the stickier side, add a bit more flour (don’t overdo it!). You should have a doughy, yellowish, non-sticky ball.
- Continue to knead for about 5-10 minutes. The test to know when it’s ready is that when you press into the dough, it’s bouncy.
- Once the dough ball is ready, wrap it in cling film and rest in the fridge for about 30 mins.
- To prepare the dough for the machine, split the dough ball in half. Let the other half rest aside while you work with the first half. To prepare the machine for the dough, dust some flour before rolling it out. Start with 0 setting, and continue rolling out and adjusting the setting each time you roll it through the machine up until setting 6. Continuously flour the dough after each time you roll to avoid the dough sticking together. If the dough sticks together, you will have to start from the beginning ☹️
- Once you’re done rolling out the dough, roll the dough out through the fettuccine setting and watch the magic happen! Flour the freshly rolled out fettuccine to avoid it from sticking together. Make sure you flour it thoroughly.
- To cook the fettuccine, boil and salt the water in a pot. Once water is boiling, throw in the fettuccine to cook for about ~3 minutes. Be careful not to overcook! You can also taste to check if it’s cooked.
- Serve with the sauce of your choice.
