Time to make your chocolate chip cookie dreams crumb true! As it seems that more of the population (and my friends) are becoming vegans, I wanted to create something that will cater to everyone,So this recipe is for both non-vegans and vegans alike.
Foodymandy’s Chewy Chocolate Chip Cookies
Both for non-vegans and vegans alike!
Materials
- 2 eggs or 1 flax egg, for a vegan version
- 1/2 cup butter or vegan butter or coconut oil, at room temperature for a vegan version
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 2 teaspoon vanilla extract
- 1 1/4 cup flour
- 1/2 teaspoon baking soda
- 2 tablespoon cornstarch
- A pinch of salt
- 1/2 cup of chocolate chips or use vegan chocolate chips, for a vegan version
Instructions
- If you’re making the vegan version with a flax egg: place the flax meal into water and stir and let it set aside for 5 minutes.
- In a large mixing bowl, blend the butter and sugars using a mixer. Then, add egg (or flax egg) and vanilla extract and beat for 1 – 2 mins.
- In a separate bowl, whisk the flour, baking soda, cornstarch, and salt together.
- Mix ingredients from step 2 and 3 together.
- Mix in chocolate chips.
- Use ice cream scooper to form the dough balls. Place the dough balls on a baking tray into a freezer for at least a few hours before baking.
- When ready to cook the cookies, preheat the oven to 200ºC and bake for 10-12 minutes until golden brown.
- Let the cookies cool for about 5-10 minutes before serving.
