When a particular season or holiday looms ahead, we look forward to enjoying the food that comes with the occasion.
- Eggnog, candy canes, and mulled wine for Christmas.
- Pumpkin pie, turkey, and sweet potato with marshmellows for Thanksgiving.
- And for the season we are officially in now, summer! Pimm’s, rhubarb, BBQs, and the list goes on.
In my opinion, the most quintessential summer food of all time is watermelon. I have fond memories of eating watermelon in the summer when I was growing up. As soon as the centigrade went above 20ºC, it was certain that my dad would walk through the door with a watermelon in his hands.
Watermelons are perfect for a hot summer day because of its high water content, they are ~92% water. It’s the antidote for cooling down in the summer heat and refreshing your thirst.
To celebrate the official first day of summer 2020, a watermelon based recipe with a tangy dressing! This is perfect as a salad on its own or as a side or starter at a BBQ or an alfresco dinner.
Watermelon Feta Salad
Materials
- 1 watermelon
- 1 block of feta
- 1/4 cup pumpkin seeds
- 1/4 cup mint leaves
Dressing:
- 1 tablespoon olive oil
- 1 teaspoon apple cider vinegar
- 1 teaspoon lemon juice
- dash black pepper
- dash sea salt
Instructions
- Cut watermelon and feta into cubes.
- Mix watermelon, feta, pumpkin seeds, and mint leaves together. Separately mix ingredients for dressing.
- Serve salad with dressing.
