Whenever I buy sweet potatoes, I end up having an abundance of them and not knowing what to cook with them. This recipe is a great way to use them. Perfect for brunch, breakfast, as a side dish for lunch or dinner, or even a snack! They are crunchy and very flavourful. Made with a few spices that you probably already have lying around at home.
Sweet Potato Hash Browns
Servings: 4 people
Ingredients
- 4 medium sized sweet potatoes
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 3 tablespoons olive oil
Instructions
- Grate sweet potatoes with the large side of a grater.
- Mix all other ingredients together. Ideally they should be sticking together a bit.
- Heat pan to medium to high heat with cooking oil of your choice. Scoop the mixture into the pan and press down so they are flat to form into individual patties. I used an ice cream scooper to scoop the mixture in evenly.
- Cook until first side is golden brown. Then flip over to cook on the other side carefully as the sweet potato pieces may crumble apart. If they crumb apart, you can press them back in together.
- Once both sides are cooked through, serve on its own, with eggs, sauce, or whatever you fancy. I served mine with my broken poached egg haha.
