Kimchi is a traditional Korean dish made of fermented vegetables (usually Napa cabbage along with radish and garlic) and spices. Various health benefits accompanies it. As it’s fermented, it contains probiotics which help your microbiome. And it’s also known to strengthen your immune system as well.
I always keep a jar of kimchi in the fridge. I don’t really use it for cooking but enjoy nibbling at it as a snack. I recently discovered Yumchi Kim Chi and I am obsessed with it. Not only is it delicious but it’s particularly healthy, so shall we cook something with kimchi in it?
Spicy Kimchi Stir Fry Udon Noodles
Materials
Noodles:
- 1 1/2 cup udon noodles
- 1 cup kimchi chopped into squares
- 1 courgette chopped into squares
- 1/4 cup scallions thinly sliced
- 4 strips of bacon chopped (for veggie version, omit)
Sauce:
- 1 tablespoon gochujang
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon sugar
- 2 garlic cloves
- 1 teaspoon sesame oil
Garnish:
- Egg cooked sunny side up
- Seaweed in small strips
- Sesame seeds
- Spring onions chopped
Instructions
- Cook bacon in a pan. Skip the bacon for a veggie version.
- While bacon is cooking, mix the ingredients for the sauce together. Also, cook the udon noodles in a separate pot.
- Once bacon is cooked, mix in the courgettes with the bacon.
- Throw kimchi into the mixture.
- Lastly, mix in the cooked udon noodles and then the sauce.
- Serve with scallions, seaweed, sesame seeds, and egg (optional).
