I was recently involved in the launch of the Food Fighters cookbook. Food Fighters is a charity cookbook with a mission to combating food poverty. I am so honoured to have my recipe feature in support of this important initiative.
All proceeds from the Food Fighters cookbook goes to Bankuet, a zero-waste food donation platform that stocks food banks to help vulnerable people across the UK get access to food that they actually need.
The theme in the cookbook is centred around families. When I was working on my recipe for the cookbook, the first recipe that immediately came into my mind was my popo’s tomato and egg rice recipe. (Btw, popo is grandma in Cantonese.) This simple yet scrumptious dish is one of my ultimate childhood favourites. Check out the Food Fighters cookbook for the recipe and the story behind the recipe.
