I fully acknowledge that this dish is not innovative whatsoever. This dish is inspired by the miso glazed black cod made famous by Nobu. It’s actually one of my favourite dishes to get at Nobu. So I had to try to make something similar at home.
To make the dish a bit different from the classic, I wanted to experiment with a different type of fish so I chose cod. It’s also super quick and simple to cook!
Miso Glazed Fish
Materials
- 1/4 cup mirin
- 1/4 cup sake
- 3 tablespoons miso
- 1 tablespoon sugar
- 2 teaspoons dark sesame oil
- 1 fish fillet I used cod but you could also use salmon or any fish of your choice
- Garnish with sesame seeds
Instructions
- Combine mirin and sake in a saucepan on high heat. Boil for ~20 seconds, stir in the miso and sugar. Whisk over medium heat without letting the mixture boil until the sugar is dissolved and miso is mixed thoroughly.
- Remove from heat and whisk in sesame oil. Allow to cool.
- Pat the fish dry and place the fish and the miso marinade in a baking dish. Marinate for 2-3 hours or overnight if possible.
- Preheat oven to 200°C. Cook fish brown on each side for 2 mins in a pan. Then bake for 10 mins.
